Indori Poha
Ingredients (Royal Ratan Special)

1 cup Royal Ratan Poha (flattened rice – medium or thick)

1 medium onion (finely chopped)

1 medium potato (peeled & diced)

2–3 green chilies (slit or chopped)

6–8 curry leaves
-
½ tsp mustard seeds
-
½ tsp turmeric powder
-
2 tbsp roasted peanuts
-
2 tbsp oil or ghee
-
Salt to taste
-
1 tbsp lemon juice
-
Fresh coriander leaves for garnish
Method (Royal Method)

Wash the Royal Ratan Poha in a sieve under running water. Drain and keep aside for 5–10 minutes to soften.

Heat oil or ghee in a pan. Add mustard seeds, curry leaves, and green chilies for tempering.

Add diced potatoes and cook until soft.

Add onions and sauté till light golden.

Add turmeric powder, roasted peanuts, and mix well.

Gently add soaked poha and salt. Stir lightly to avoid breaking the grains.

Cover and cook for 2–3 minutes on low flame.

Switch off the flame, add lemon juice, and garnish with fresh coriander.
Serving Tip

Serve hot with a sprinkle of sev or grated coconut on top.

Enjoy with a cup of hot tea for a perfect breakfast.
