Royal Ratan Sabudana Khichdi
Ingredients (Royal Ratan Special)

1 cup Royal Ratan Sabudana (soaked for 3–4 hours)

1 large potato (boiled & chopped)

2 tbsp peanuts (roasted)

2 tbsp ghee or oil
-
1–2 green chilies (finely chopped)

1 tsp cumin seeds
-
Rock salt (sendha namak) – as per taste

1 tbsp lemon juice
-
2 tbsp fresh coriander (finely chopped)
Method (Royal Method) -
Drain the soaked sabudana in a sieve and keep aside for 15–20 minutes to remove excess water.

Heat ghee or oil in a pan, add cumin seeds and green chilies for tempering.

Add potatoes and sauté until lightly golden.

Add roasted peanuts and stir for a minute.

Mix in the drained sabudana and rock salt, stirring gently.

Cook on low flame for 4–5 minutes until sabudana turns transparent and soft.

Switch off the flame, add lemon juice and garnish with coriander leaves.
Tips
-
Do not over-soak sabudana; it may turn sticky.

For added flavor, you can mix in grated coconut.

If not for fasting, you may also add onions and spices.
